New to Bonsai, and want to know how to plant them on rock

I am new to planting bonsai, and I really want to get this right. However, I have been aquascaping for a years. 


Can anyone recommend the best way to go about creating something like this?

Would you start out with "baby" plants, or buy grown plants?
